Homemade Pasta (for Ravioli)

“Ravioli. I love ravioli. Ravioli. It’s the stuff for me!”

Homemade Pasta for Ravioli (a little softer texture)

prep: 30 min cook: 5 min total: 1 hour serves 12

Ingredients:

1 1/2 cups semolina pasta flour

1 1/2 cups all-purpose flour

4 eggs

4 TBSP olive oil

4 TBSP water

1 tsp sea salt

How to Make It:

  1. You can make homemade pasta by using a stand-up mixer, or if you don’t have one, you can make it by hand.

  2. When using a stand-up mixer, place eggs, water, and olive oil in the bowl. Using the dough hook on medium speed, start adding your flours till your dough starts forming into a ball. The sides of the bowl should be clean, and the dough should feel like an earlobe. It should bounce back a bit.

  3. If the dough is too sticky, add a TBSP of each all-purpose and semolina flour.

  4. If the dough is too dry, sprinkle water until it is the right consistency.

  5. Remove the dough from the bowl and wrap in plastic wrap and let rest for 30 min.

  6. After resting, place the dough on a lightly floured surface. Cut dough into quarters.

  7. Roll out dough to the desired thickness. I roll it out to the thickness of my #0 setting on my Kitchenaid Pasta Roller

  8. Flour the rolled out piece of dough. 

  9. Turn on your mixer to the 1st or 2nd lowest speed and send dough through the pasta roller. Fold this piece of dough in thirds and rotate so that the straight edges are on the sides.

  10. Send the dough through the roller again. Repeat step #9 three times on the #0 setting.

  11. Next, change the roller thickness to #1 and send the dough through.

  12. Continue this process for thickness #2, #3, #4 and end with #5.

  13. Dredge pasta with flour, so it doesn’t stick and place on parchment paper or a dish towel and cover, so it doesn’t dry out.

  14. Continue the same steps above for the other 3 pieces of dough.

Take one sheet of the pasta and place rounded teaspoonfuls of filling, 1 in. apart, over half of pasta sheet. Brush around filling with egg to moisten. Fold sheet over; press down to seal. Cut into squares with a pastry wheel. Repeat with remaining dough and filling.

Cooking Your Homemade Ravioli Pasta

  1. Bring large to of salted water to boil. 

  2. Add ravioli. Reduce heat to gentle simmer and cook for 1 - 2 minutes or until the ravioli float to the top.

  3. Remove from heat and drain. Please do not rinse :) 

  4. Spoon your favorite sauce over them.

  5. Enjoy!
