Biondeggiante (Golden) Salad
“This is a great salad all year round, but exceptionally quick and easy for "Stop By Sundays." Mostly because every one of the ingredients is always on hand, this recipe also makes for a delicious entree by adding filet mignon, salmon, shrimp, or chicken.”
Ingredients:
1 5 oz. package arugula
1 11 oz. can Del Monte Summer Crisp® Whole Kernel Corn, drained
2 tomatoes, medium-sized
1/4 cup red onion, sliced thinly
1/4 cup Parmesan cheese, grated
4 oz. fresh mozzarella cheese, cubed
salt and pepper to taste
For the Dressing:
1 tsp. apple cider vinegar
1/4 cup Lucini olive oil
How to Make It:
In a large salad bowl, add the arugula, can of corn kernels, red onion, and mozzarella cheese.
In a small bowl, mix together apple cider vinegar and olive oil and drizzle over salad mixture. Toss salad until all ingredients are combined well.
Add salt and pepper to taste.
