Homemade Pappardelle Pasta

“I love the texture of this pasta especially with meaty sauces like Wild Boar Ragu or Bolognese. It cooks to more of an al dente bite, than a softer, slippier pasta dough that one might use for ravioli. You can cook it right away or dry it for future use.”

Ingredients:

3 1/2 cups all-purpose flour (plus additional for rolling out dough)

4 large eggs, at room temperature

1 TBSP. olive oil

1 - 2 tsp. water

How to Make It:

  1. Place eggs, olive oil, and water into stand up mixer bowl. You can make homemade pasta by using a stand-up mixer, or if you don’t have one, you can make it by hand (if making by hand see HELPFUL HINT below).

  2. Using the dough hook on medium speed, gradually incorporate the flour till your dough starts forming into a ball. The sides of the bowl should be clean, and the dough should feel like an earlobe. It should bounce back a bit.

    If the dough is too sticky, add a TBSP of all purpose flour.

    If the dough is too dry, sprinkle water until it is the right consistency.

  3. Remove the dough from the bowl and wrap in plastic wrap and let rest for 30 min.

  4. After resting, place the dough on a lightly floured surface. Cut dough into quarters.

  5. Roll out dough to the desired thickness. I roll it out to the thickness of my #0 setting on my Kitchenaid Pasta Roller.

  6. Flour the rolled out piece of dough. 

  7. Turn on your mixer to the 1st or 2nd lowest speed and send dough through the pasta roller. Fold this piece of dough in thirds and rotate so that the straight edges are on the sides.

  8. Send the dough through the roller again. Repeat step #9 three times on the #0 setting.

  9. Next, change the roller thickness to #1 and send the dough through.

    Continue this process for thickness #2, #3, #4 and end with #5.

  10. Dredge pasta with flour, so it doesn’t stick and place on parchment paper or a dish towel and cover, so it doesn’t dry out.

    Continue the same steps above for the other three pieces of dough.

  11. Now you are ready to cut the pasta into long strips. You do this by rolling up each sheet of pasta and cutting into 3/4” wide.

  12. Dust with flour and set aside on a floured surface or clean dish towel.

    Continue rolling and cutting with each sheet of pasta.

  13. Now you are ready to cook the pasta! Place pasta in salted boiling water for 4 minutes or until it’s cooked to your preference. Drain into a colander (do not rinse) and serve with your favorite pasta sauce.
