How to Make It:

  1. Preheat oven to 350°.

  2. Brown the butter: Slice butter into pieces and place into a medium-sized skillet. Melt the butter over medium heat, so it doesn’t burn. Once the butter is melted, it will begin to foam. Continue stirring. In 5 - 8 minutes, the butter will start browning. I will smell delicious! Once browned, remove from heat and pour into a heat safe bowl. Allow to cool for 5 minutes.

  3. In a medium-sized bowl, stir together flour, baking soda, and salt. Set aside.

  4. Add the sugar to the browned butter. Using a stand-up mixer with a paddle, or a handheld mixer, beat together on medium-high speed until combined. This process should take about a minute. Beat in the eggs and the vanilla extract.

  5. Add the dry ingredients into the wet ingredients and beat on low speed, working your way up to high speed until everything is combined. The dough should be thick and greasy.

  6. Turn dough out onto a sheet of parchment paper; knead the dough gently until it forms into a ball.

  7. Roll dough to a 1/4”inch thickness. Cut with cookie cutter(s) of your choice; reroll scraps as needed.

  8. Arrange cookies 1 inch apart on baking sheets lined with parchment paper. Place in the refrigerator for 10 minutes. While these cookies are chilling, roll out your scraps and cut more cookies and place on parchment lined cookie sheet.

  9. Remove cold cookie dough from the refrigerator and bake at 350° for 7 - 10 minutes(depending on the size of your cookies) or until edges are lightly browned. Cool cookies on wire racks.

    For the Icing:

Combine powdered sugar, half-and-half, and 1/4 teaspoon vanilla extract, stirring with a whisk until icing is smooth. Spoon about 3/4 teaspoon icing onto each cookie; spread to edges. While icing is wet, sprinkle each cookie with 1/2 teaspoon pearlized sugar. Dry on wire racks.
