Thyme Roasted Sweet Potatoes

"These were a huge hit at Thanksgiving! Super easy and super delicious! I like them best when they are served at room temperature."

Ingredients:

5 sweet potatoes, cut into medium sized cubes

1/3 cup fresh thyme leaves

3 TBSP olive oil

4 large garlic cloves, minced

1/2 tsp sea salt

1/2 tsp red pepper flakes

How to Make It:

  1. Preheat oven to 450°.

  2. In a large bowl, combine sweet potatoes, thyme, olive oil, garlic, salt, and red pepper flakes and toss till everything is evenly coated. 

  3. Arrange sweet potatoes on a cookie sheet in a single layer.

  4. Place baking sheet on the top rack of your preheated oven; roast until potatoes are slightly browned on the edges and are tender approximately 40 minutes.
