Orzo Pasta Salad

“This pasta salad recipe is such a great cheater salad! One stop at Trader Joe’s and you’ve got all you need. It is very quick and easy for when you need something fast! It is a healthy and protein-packed mixture of green garbanzo beans, red and green lentils, tomatoes and olive oil. Great as a side dish and filling enough for a main course. A big hit with the vegans in my family!”

Ingredients:

1 16 oz. package orzo duram semolina pasta (I like Trader Joe’s orzo pasta)

1 tsp. salt

1 12 oz. package Trader Joe’s Melodious Blend

1 16 oz. package Trader Joe’s frozen petite peas

3 medium to large bell peppers, diced (1 red, 1 green, 1 yellow)

1 large red onion, finely sliced (or diced if you prefer)

1 TBSP Trader Joe’s 21 Seasoning Salute

5 large fresh basil leaves, sliced finely

1 8 oz. bottle Trader Joe’s Balsamic Vinaigrette (or you can add olive oil and balsamic vinegar to taste)

How to Make It:

  1. Dice bell peppers, slice or dice red onion.

  2. In a large pot, bring 4 quarts of salted water to a rolling boil.

  3. Add pasta to boiling water and stir gently.

  4. Boil for 9 minutes, stirring frequently.

  5. Remove from heat and add 1 cup cold water to the pot to stop the pasta from cooking.

  6. Drain well and put into a large serving/salad bowl.

  7. Add vinaigrette or olive oil and balsamic immediately, so the pasta doesn’t stick together.

  8. Add Melodious Blend, frozen peas, bell peppers, red onions, and seasoning. Stir all ingredients together until thoroughly combined.

  9. Top with fresh basil.
